Fudge Babies

Do you like to eat raw chocolate cookie dough when you’re baking?  If so, you will probably love this recipe for Fudge Babies that I stumbled across the other day on the Chocolate Covered Katie blog.  They’re a raw dessert made from a mixture of Medjool dates, nuts, vanilla and cocoa powder.  I used pecans in place of the walnuts called for because we like them and had them on hand.  I expect almonds would also work well.  The ingredients are whipped together in a matter of minutes in the food processor and then rolled into balls.  If you place them in mini-muffin papers, they look prettier and more like candies.  I was skeptical about the whole Medjool date thing, but I promptly downed about 3 of these which is a good indication that I liked them!  My husband liked them too.  I can hardly wait to try Katie’s other flavors as well as playing with the basic recipe!

Fudge Babies (adapted from ChocolateCoveredKatie.com)

Makes about 20 Fudge Babies, depending on what size you roll them.

1 1/3 C (230 grams) pitted Medjool dates
1 C (120 grams) pecans
1 tsp. vanilla extract
3-4 Tbsp. unsweetened cocoa powder (I used 1/2 regular and 1/2 extra dark)
pinch of salt (optional)

Make sure you have pitted the dates!

Combine all ingredients in the food processor and blend well until the mixture is smooth and will hold together when rolled.  Roll the mixture into little balls and place in mini-muffin papers.  Try not to eat all of them at once!

Postcript:  I recently tried the peanut butter baby version (without the cocoa powder) and have a new favorite treat!
