This peanut butter and banana smoothie is one of my favorite breakfast treats. The peanut and banana combination gives me lots of energy and I don’t get hungry again for hours. It’s the perfect breakfast prior to hiking or kickboxing or when I know I’m not going to get lunch until late and I don’t want anything heavy in my stomach. You can also put it in an insulated travel cup and take it with you on those mornings you’re too busy to sit down to breakfast. If you keep frozen chunks of banana in your freezer at all times, this is a snap to whip up whenever the mood strikes. Chunks of frozen banana are blended with low fat milk and yogurt and a dollop of peanut butter for a creamy smoothie that is almost a milkshake. If smoothies for breakfast aren’t your thing, this would be great as an afternoon snack as well.
Peanut Butter Banana Smoothie – Adapted from The Food You Crave by Ellie Krieger
1 ripe banana, cut into 6 chunks and frozen
1/2 cup low-fat milk
1/4 cup low-fat plain yogurt, regular or Greek style
1 1/2 Tbsp. creamy peanut butter
Combine the milk, yogurt and peanut butter in a blender and pulse it for just a second to combine the peanut butter with the wet ingredients. Add in the frozen banana chunks and blend on high until the mixture is smooth.
Variations: A pinch of cinnamon is also delicious when added to this mixture.
