Comfort Cookies – Soft Peanut Butter Chocolate Chunkers

My sweetie is a big cookie eater, especially when he’s stressed out, and peanut butter with chocolate is a popular combo.  One of his favorite treats for comfort eating are these Soft Peanut Butter Chocolate Chunkers from the Spring 2010 issue of King Arthur Flour’s Baking Sheet Newsletter.   Unlike most peanut butter cookies, these are very soft and almost cakelike but have a wonderfully strong peanut butter flavor.   It’s a sure method of putting a smile on my peanut butter lover’s face!

Soft Peanut Butter Chocolate Chunkers

Very soft peanut butter cookies with great peanut flavor and chunks of chocolate.
Ingredients
  • ¾ cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 tsp. vanilla extract
  • ¼ cup milk
  • 2½ cups unbleached all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 cups bittersweet chocolate chips or semi-sweet chocolate chunks
Instructions
  1. Preheat oven to 375°F. Line 2 baking sheets with parchment paper.
  2. Ina large bowl or mixer, cream the butter and peanut butter together with the brown sugar until smooth. Beat in the eggs, then stir in the vanilla and milk.
  3. In a separate bowl, combine the flour, baking soda and salt with a whisk. Stir the flour mixture into the creamed mixture just until mixed. Stir in the chocolate chips.
  4. Drop by the tablespoonful on a baking sheet 2 inches apart. These cookies do not spread, so you may want to press them down slightly with your hand or a spatula.
  5. Bake for 10 minutes, until golden brown on top and bottom. Remove from the oven and cool on the pan for 5 minutes before moving to racks to cool completely.
