Monkey Bites

I was recently given a free subscription to Better Homes and Gardens.  Flipping through my first issue (August 2013) I came across these great little treats.  Frozen banana slices filled with peanut butter, dipped in chocolate and topped with a salty peanut half or some sea salt.    Cool, creamy, salty and sweet – this treat hits all the right notes and is a fairly guilt-free little snack.

They aren’t too hard to make – slice up some bananas (try to get them more even than I did) and freeze the slices.  Sandwich two slices with peanut butter, it doesn’t take much.  Re-freeze them and then dip in melted chocolate.  If desired, top with a half of a salted peanut or sprinkle with some sea salt.  I think these would also be good sandwiched with nutella, Biscoff spread or maybe even some jam.

Ingredients
  • Frozen banana slices
  • peanut butter
  • dark chocolate
  • salted cocktail peanuts or sea salt (optional)
Instructions
  1. Slice bananas and freeze in a single layer on a foil-lined sheet.
  2. Once frozen, spread half the slices with peanut butter and top with the remaining slices.
  3. Refreeze.
  4. Dip the sandwiches in melted chocolate and sprinkle with sea salt or top with a peanut.
Notes
There were no amounts given in the magazine. I used two large bananas, a little less than ¼ cup peanut butter and 8 oz of chocolate and I got 14 Monkey Bites.
