Fresh Berry Pie

This is a great summer pie recipe.  I first had this at a sewing group in Oregon that my Aunt Marilyn belonged to.  My fruit choice for this pie is the raspberry although I'm sure other berries are good in it too.

1 pre-baked pie shell
1 quart or more of strawberries, raspberries or blackberries
1 cup sugar
1 cup cold water
2 Tablespoons cornstarch
1 3oz package Jello - flavor of berry used or lemon
1 8oz package cream cheese, softened
1/3 cup sugar
1/2 tsp vanilla
Mix 1 cup of sugar and cornstarch in a sauce pan; stir in water slowly.  cook and stir over medium heat until thick and clear.  Remove from heat and stir in Jello.  Refrigerate until mixture starts to thicken.

Meanwhile, whip the cream cheese, 1/3 cup sugar and vanilla until smooth.  Spread over bottom of cooked and cooled pie shell.  Chill until cream cheese becomes firm.

Pour berries onto cream cheese in pie shell.  Spoon Jello mixture over all the berries.  Refrigerate.  Garnish with whipped cream if desired.
