Layered Cookie Bars

There are lots of versions of cookie bars around which layer in everything but the kitchen sink and everyone seems to love them. I like this simpler version of the bars, which layers butter, graham cracker crumbs, chocolate chips and peanut butter chips and sweetened condensed milk. I usually have these ingredients on hand, but if I don't have peanut butter chips, butterscotch chips or another mild candy chip will do just fine. One of the great things about this recipe is that it is really very quick to put together. The only problem is having the patience to wait for them to cool enough to cut and eat. Well, maybe there are two problems with this recipe because not eating too many is also difficult!

Layered Cookie Bars
1/2 c. butter (melted)
1 1/2 c. graham cracker crumbs
1 (14 oz.) can sweetened condensed milk
1 (12 oz.) pkg. semi-sweet chocolate chips
1 c. peanut butter chips

1. Preheat the oven to 350° F.

2. Line a 9x13 pan with foil, spray lightly with cooking spray.

3. Pour the melted butter into the pan and move the pan around to evenly coat the bottom with the butter.

4. Sprinkle the graham cracker crumbs evenly over the butter.

5. Pour the condensed milk evenly over the top of the crumbs.

6. Sprinkle the baking chips evenly over the top of the condensed milk and then press down firmly to even out the top.

7. Bake the bars for 25-30 minutes, until the top is lightly browned.

8. Cool completely and then remove bars from the pan by lifting up on the foil. Peel away the foil and slice the cookie into 32 bars.

9. If the bars are still too soft, they may be chilled to firm them up, but they will need to sit at room temperature for a few minutes before eating them.
