| This Soft Peach-Amareto "Ice Cream" recipe comes from the book Process This! by Jean Anderson. Frozen peaches, sugar, Amaretto, OJ concentrate and chilled non-fat evaporated milk are "churned" in the food processor for mere minutes and produce a soft, fluffy, and light frozen mixture somewhat like soft-serve ice cream. Since this is a fairly light recipe, you can eat this yummy mixture with very little guilt. Serve it immediately, as it will not keep well. | |||

Place all ingredients except the milk in a heavy duty food processor fitted with the metal chopping blade. Churn/process for 1 1/2 minutes non-stop. Scrape down the work bowl. Variations: Use any frozen fruit you like and switch up the liqueur flavor to suit your taste. If you want to be really decadent, use heavy whipping cream instead of evaporated milk! |
