Chocolate Chip Pumpkin Cookies |

| I love pumpkin in cookies, cakes and breads. With the start of fall, it seem appropriate to start baking with it again. Here is a recipe for pumpkin cookies that my husband especially likes because it's a nice soft cookie, almost like eating a muffin. If you don't care for chocolate chips (well, there's something wrong with you but that's beside the point) you can substitute raisins. | ||

| Preheat the oven to 350 degrees. In a large bowl, cream the cutter and sugar together. Add the eggs and pumpkin and mix well. Add the dry ingredients and mix well. Stir in the chocolate chips. Drop by tablespoons onto greased cookie sheets. Bake 12-14 minutes, depending on the size of your cookie. Do not over-bake. |
