Fred Harvey's Railroad Slaw

I don't know for sure who  Fred Harvey is and I've long since forgotten who gave me this recipe.  However, a google of "Fred Harvey" turned up some information on a Harvey's restaurant which served the Santa Fe railroad line in the late 1800s and also turned up several similar recipes.  Whoever Fred Harvey is (or was), this is a good summertime recipe.  It's easy, tasty, and since it doesn't have mayonnaise it's a good salad to bring to summer potlucks and picnics.  It also keeps extremely well, so leftovers are not a problem if, like me, you're the only one in the house that likes cabbage.

3 cups cabbage, shredded
2 tablespoons onion, minced
1/4 cup sugar
3/4 teaspoon dry mustard
1/4 cup white vinegar
1/4 teaspoon celery seed
1/4 cup peanut oil
Sprinkle the cabbage with the onion and sugar. In a small saucepan, whisk together the remaining ingredients. Stirring often, bring to a boil and then pour at once over the cabbage. Mix thoroughly. Cover and chill at lest 4 hours before serving. Keeps well for as long as 5 days.
