Watermelon Cookies

This is a good cookie for summer picnics.  It's basically an Angel Chocolate Chip Cookie, but in the shape of a watermelon slice.  I saw something similar in the grocery store once and decided to create my own.  Since it's a slice and bake cookie, the dough can be made well in advance and the cookies baked whenever desired and in whatever amounts needed.

1 1/2 cups powdered sugar
1 cup unsalted sweet cream butter, softened
1 egg
1 teaspoon real vanilla extract
2 2/3 cup all-purpose flour
1/4 teaspoon salt
1/2 cup mini chocolate chips
red and green food coloring
Mix powdered sugar, butter, egg and vanilla in a large bowl.  Stir in flour and salt.  Divide dough in half.  Stir red food coloring and chocolate chips into one half.  Stir green food coloring into the other half.

Shape green dough into a rectangle on waxed paper, approximately 12 x 6.  Shape red dough into a roll the same length as the green dough.  Place it on the green dough.  Wrap the green dough around the red dough, using the waxed paper to help.  Press the edges together. 

Wrap and refrigerate 2 hours or more until firm.

Preheat oven to 375 degrees.  Cut the dough rolls into 1/4 inch slices and then cut each slice in half to form two semi-circle watermelon "wedges".  Bake 8-10 minutes until set.
